Lemon Pepper

Product description

Lemon Pepper smells bright before it hits the pan: dried lemon peel first, then the woody heat of cracked black pepper underneath. The taste follows the same order. A clean citrus sourness up front, a slow peppery burn at the back, and enough salt to pull both together. The grind is coarse enough to see the flecks of yellow peel against the black, so it reads as seasoning rather than dust.

It belongs on anything pale and mild. Rub it on chicken thighs or wings before roasting, about a teaspoon per pound, and the peel toasts into something almost caramelized. Shake it over white fish fillets with a little butter. Toss it with roasted potatoes, green beans, or broccoli straight out of the oven. Stir a half teaspoon into mayonnaise for a sandwich spread, or into softened butter for corn on the cob. It works on scrambled eggs, on popcorn, and on plain rice when there is nothing else in the house. Add it late to cream sauces, since the citrus can turn dull with long simmering.

Start with less than feels right. The salt and pepper build fast, and a heavy hand makes food taste sharp rather than lemony. Keep the jar closed, dry, and away from the stovetop, where steam and heat flatten the peel within weeks. A cupboard shelf is fine. Use a dry spoon rather than shaking over a steaming pot.

The three sizes sort by how often you reach for it:

  • 3 oz jar: enough for a few months of weeknight chicken and fish for one or two people.
  • 29 oz jar: for cooks who season most proteins and vegetables with it and refill a small shaker at the stove.
  • 110 oz jar: built for catering, a busy line, or a household that seasons in trays rather than plates.
  • Decant from the 29 oz or 110 oz into a smaller shaker and keep the large jar sealed.
  • If unsure, the 3 oz jar tells you within a month whether it earns rack space.
